I'm pleased to announce that my article Optimising Mash Temperature has been published in the July 2021 edition of Zymurgy.

Abstract

Temperature control is important at several stages of the brewing process. In this article, we discuss the temperature control of the mash and the strike formula used to estimate the temperature of the liquor added to the mash tun. By using this formula, it is possible to hit the sweet spot reliably between 149°F and 155°F to get an optimum extract from the grain.
